My beautiful fiancé Melanie prepared this meal for me last year and I thought it was top class therefore would like to share it with you, it was so much better that going to an overcrowded, overprice restaurant.
This is a very simple 3-course meal to prepare but very delicious and cheap compared to a restaurant version.
Baked Camembert With Cranberry Sauce
Ingredients
2 Small Camembert cheese (or 1 large, use a pastry cutter and cut 2 individuals)
2 Tbsp Cranberry Sauce
Handful of Mixed Salad Leaves
Crusty Bread
Method
1 Pre-heated oven 200°C, Gas 6
2 Place camembert unto a baking tray and bake for 5-10 minutes
3 Arrange salad on 2 small plates, place Camembert on top and serve with cranberry jelly and crusty bread.
Monkfish wrapped in Parma Ham
Ingredients
2 Monkfish Fillets
4 slices Parma ham
Cherry tomatoes on the vine
250ml Balsamic vinegar
New Potatoes for 2
Selection of vegetables for 2
Method
Pre-heat oven 180°c, gas 4
Wrap the fish fillet in Parma ham and place in a non stick-baking tray
Place the vine tomatoes on top, and pour over balsamic vinegar, place in oven for 10 minutes.
Boil your potatoes and vegetable until tender.
Remove fish from the oven and spoon over the vinegar and juice from the tomatoes and return for a further 10 minutes.
Serve fish with tomatoes on top with some of the sauce and vegetables.
Roast figs with cinnamon and honey
Ingredients
11/2 tbsp clear honey, such as orange blossom or acacia
Very small knob of Butter
1 tbsp orange liqueur (optional) or grated zest of 1/2 orange
1/4 tsp ground cinnamon
6 ripe figs
Method
1. Preheat the oven to 190°C/gas 5.
2. Put the honey, butter, liqueur or zest and cinnamon in a small saucepan. Heat gently, stirring, until liquid.
3. Using a small, sharp knife, make a cut like a cross in the top of each fig, cutting almost down to the base.
4. Place them upright in a roasting pan, don’t over pack. Pour the liquid over each one. Roast for 15 minutes.
5. Switch oven off, leaving the door ajar. Leave the figs in the oven for 5-10 minutes before serving.
6. Serve warm with Vanilla ice cream or Crème Fraiche
